How you go about adapting medieval recipes to modern? This looks like pure sorcery to me. :p

Sure! This should be interesting to write up, since I suspect I take huge portions of the process for granted. Though for the strudel I posted about recently, I did the obvious thing and looked at modern recipes for strudel and pie filling in order to figure out the quantities.
