Translucent pancakes waited in a tower of blue steamer baskets. I made slender rolls, trying not to overwhelm the shrimp. Later, almost sated, I picked up thin white noodles scattered in peanuts with scraps of brilliant lettuce, and dipped them in plum sauce.
