Good catch! Bahlow's Dictionary of German Names has someone called zur Eiche in 1298. (Also a house called zum Eichhorn in Freiburg in 1460, which is cute.) I'll check with someone who has spent more time looking at medieval German names than I have, but it does sound like this needs an expansion.
