Does your family have citrus trees? That's definitely one of the things I miss about living in California.
The carrot salad is also out of The Food of Morocco, though I grated the carrots, and I think her recipe calls for steaming and dicing them. It has small quantities of a bunch of spices (paprika, cayenne, and I think cumin and cinnamon), and some lemon juice.
